Vegetables not only supply vitamins but also microelements, macroelements which are necessary for cell metabolism. Some vegetables have medicinal values as well. In Vietnam, however, farmers use insecticides, herbicides, chemical fertilizers on dry and aquatic vegetables. Some aquatic vegetables grow in waste water from the factories and sewage of livetocks which when ingested can present a public health concern.
